  • 1 small yellow onion, finely diced
  • 1/3 cup dill pickles, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 16 egg roll wrappers (6-inch square)
  • 1 egg, beaten (for sealing)
  • Vegetable oil, for frying (about 3 cups)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the beef, until browned and onions are soft, about 6-7 minutes. Drain most of the grease, leaving a little for flavor.
  2. Stir in chopped pickles, ketchup, mustard, Worcestershire sauce, salt, and pepper. Cook for another 1-2 minutes until well mixed and fragrant. Taste and adjust seasoning if needed.
  3. Remove skillet from heat. Sprinkle shredded cheddar over the warm beef mixture and stir until the cheese melts. Let the filling cool for 5 minutes.
  4. Lay an egg roll wrapper on a clean surface with one corner facing you. Place 2 heaping tablespoons of filling near the bottom corner. Fold up the bottom, tuck in the sides, and roll tightly. Brush the top edge with beaten egg to seal. Repeat with remaining wrappers and filling.
  5. Pour vegetable oil into a deep frying pan or Dutch oven to about 2 inches deep. Heat to 350°F (175°C).
  6. Working in batches, fry egg rolls seam-side down for 2-3 minutes per side, or until deep golden brown. Turn with a slotted spoon or tongs. Transfer to a cooling rack or paper towels to drain.
  7. Let cool for a few minutes before serving. Serve hot with your favorite dipping sauce.

Notes

Let the filling cool before wrapping to prevent soggy wrappers. Roll tightly and seal well with egg wash to avoid bursting. Fry in batches to maintain oil temperature and crispiness. For a lighter version, bake at 425°F for 12-15 minutes, flipping halfway. Leftover filling is great in grilled cheese or scrambled eggs.
