Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing!
- Fold in the chocolate chips using a spatula until evenly distributed.
- In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Using a cookie scoop or tablespoon, drop a spoonful of cookie dough onto the prepared baking sheet. Make a small indentation in the center of each dough ball.
- Fill each indentation with about a teaspoon of the cheesecake filling.
- Cover the cheesecake filling with a little more cookie dough, ensuring it’s sealed. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
Notes
For a lighter version, you can swap out the cream cheese for a lighter or dairy-free alternative. Adding a pinch of sea salt on top before baking enhances the flavor.
